Description

SUMMARY / OBJECTIVE

The Bakery Production Manager is responsible for in establishing and maintaining systems and procedures for the ordering, receiving, storing and preparing all food items in the Bakery, as well as menu planning and development. Assists in unit forecast and unit accounting. Coordinates and supervises personnel regarding production, merchandising, quality and cost control; labor scheduling, staffing and employee training. Conducts period inventory; performs other functions such as maintaining records to comply with government and accrediting agency standards.

Manage the ongoing daily operations of the Bakery while preserving, promoting and protecting the Family Express brand image. Ensures that requirements for appropriate sanitation and safety levels in respective areas are met.

ESSENTIAL FUNCTIONS

  • Adheres to the company’s vision and mission
  • Build relationships, promote the living brand, and serve as a product/brand advocate
  • Adhere to company policies and procedures
  • Develop, administer, implement and maintain all day-to-day operation policies and procedures of the bakery.
  • Plans, directs and controls all unit food service and resources to meet operating and financial goals.
  • Communicate with Management and cross departments on overages or cuts during production in an expedited manner.
  • Reduce food costs through training, cost control and labor management
  • Assist with the creation, supervision and maintenance of financial transaction data and reporting, including the preparation of yearly budgets.
  • Responsible for developing a comprehensive strategy and decision-making criteria for all new product developments, scheduled product introductions, promotions, pricing, and merchandising of all food service products.
  • Plans, direct and coordinates the activities of production employees in the bakery and communicates with Management modifications made to production.
  • Administer and direct all aspects of the bakery including hiring, coaching, training and development of culturally compatible staff.
  • In connection with the DC Procurement Manager, responsible for purchasing and receiving of food and supplies, as well as monitoring inventory. Provides for and maintains the health and safety of the employees and general public
  • Ensure that all vendors are aware of and comply with the Family Express Corporation vendor policy
  • Maintains food production records
  • Develop formulations and production schedules which maximize customer appeal while minimizing ingredient and labor costs
  • Control inventory and acquisition costs
  • Devotes percentage of time to managing bakery production by working in the bakery on as needed basis.

  • Provide appropriate reporting of risk-related information to Management, Operations and Accounting
  • Completes any and all scheduled performance reviews
  • In the absence of the Quality and Safety Manager, the Production Manager is the Quality and Safety Manager
  • Special projects as assigned

SUPERVISORY RESPONSIBILITY

Bakery Team Leads and Bakery Associates report to this position.

WORK ENVIORNMENT

Must have flexibility, all days of the week, when necessary. Ability to tolerate extreme temperatures. Exposure to cleaning solvents.

TRAVEL

Minimal travel outside of daily travel to Family Express locations is expected for this position.

ROLE QUALIFICATIONS

PREFERRED EXPERIENCE REQUIREMENTS

5 years previous experience in food production

Bachelor’s Degree

PHYSICAL REQUIREMENTS

While performing the duties of this job, the employee is required to sit and stand for prolonged periods; work longer than eight (8) hour shifts, reach, climb, balance, stoop, kneel, crouch; talk and hear; taste and smell. Work for prolonged periods in a refrigerated environment. Specific vision abilities required by the job include close vision, distance vision, color vision, peripheral vision, depth perception, and the ability to focus.
