Job Summary: The Food Service Supervisor at Old Tucson Entertainment is responsible for overseeing daily operations of food service locations and catering, ensuring compliance with food safety regulations, managing inventory, and training staff. This role also involves developing menus, coordinating with other departments, and maintaining food hygiene standards to ensure high-quality guest experience.
Essential Duties and Responsibilities:
- Responsible for the day-to-day management of Food Service locations and Catering Operations for Old Tucson Entertainment.
- Ensure compliance with standard operating procedures and food safety regulations and procedures.
- Maintain food and beverage presentation standards at all food service locations.
- Review departmental needs regularly and assign daily schedules and tasks to ensure efficient operations.
- Notify the Facilities team of equipment/building issues and update department managers of any ongoing equipment issues.
- Train, direct, schedule, evaluate, and discipline food service leads and team members.
- Oversee the monthly and annual food service inventory processes, including record keeping and reporting.
- Responsible for food service stock management and product procurement in line with budgets and targets.
- Maintain clear lines of communication between management, team members, and other departments.
- Works with the General Manager and Sales & Revenue Manager to develop all restaurant menus.
- Develops and implements all training materials, programs, and classes for all Food Service positions, including kitchen and cashier leads.
- Ensure oversight and enforcement of all Food Hygiene and Safety Standards for Old Tucson Entertainment.
- Develop all allergy information guides for all food service locations.
- Maintain up-to-date knowledge of all state and local applicable health and safety regulations.
- Oversee food service storage operations to ensure the park is compliant with all state and local health regulations.
- Work with the Facilities Department to create maintenance and cleaning schedules for all kitchen equipment.
- Other duties as assigned.
Education, Skills & Work Experience Requirements:
- Minimum of 3 years’ experience supervising multiple kitchens. Must have previous kitchen supervisory experience
- Knowledge of modern inventory and recordkeeping practices and procedures
- Excellent customer service skills
- Ability to effectively communicate
- Strong organizational, planning and time management skills
- Knowledge of budgetary principles and practices
- ServSafe Manager Certification
- Food Handling Permit
- Skilled negotiator
Work Environment:
- Majority of time spent in a kitchen and restaurant setting
- Time spent in an office setting
- Must be able to stand for prolonged periods, walk on uneven ground, sit, bend, and stoop.
- Ability to pull, push, and carry a minimum of 50 lbs.
- Extended and irregular hours including nights, weekends, and holidays
