Summary
The Banquet Cook (Line Cook II) is responsible for accurately and efficiently preparing hot and cold food items for large-scale events, including meats, fish, vegetables, sauces, composed salads, and buffet-style service. This role focuses on batch cooking, banquet-style plating, and high-volume food production in a prep kitchen and event setting. Responsibilities include proper portioning, executing mise en place for banquet functions, and ensuring consistency in presentation. The Banquet Cook also assists in final plate assembly, including garnishing and arranging dishes for plated events, as well as setting up and maintaining buffet stations to ensure an appealing and organized presentation.
Responsibilities
- Prepare a variety of meats, seafood, poultry, vegetables, and other food items using kitchen equipment such as broilers, ovens, grills, and fryers.
- Adhere to all recipe and kitchen standards for each menu item, practicing precise execution.
- Assist in the preparation and execution of banquet and event menus, ensuring consistency and quality in all dishes.
- Demonstrate strong knowledge of event timing and execution, coordinating with FOH teams to ensure seamless service during banquets.
- Maintain organization in banquet prep and execution, ensuring proper labeling, storage, and efficient workflow for large-scale events.
- High School Diploma or GED.
- At least 4 years of related experience and/or training in high-volume kitchen preparation and cooking.
- Prior experience in high-volume banquet cooking, with a strong understanding of large-scale event execution.
- Previous experience in Garde Manger or a production kitchen, with a focus on cold prep, presentation, and efficiency.
