GENERAL MANAGER/OPERATING PARTNER

Heirloom is partnering with East Avenue to open HB on Madison, a fine dining restaurant, located in the newly renovated Hilton property,  Starlite West Yellowstone, on Madison Avenue, in the beautiful town of West Yellowstone, gateway to Yellowstone National Park.  HB on Madison will offer Native American Southwestern fusion cuisine, similar to Heirloom's Black Sheep Cafe.  


Heirloom is seeking a General Manager to take charge of this exciting new restaurant. 


Responsibilities:

Operational Leadership:

  • Provide overall leadership and direction for the restaurant, ensuring efficient and effective daily operations.
  • Oversee and manage all aspects of the restaurant, including front-of-house, back-of-house, and administrative functions.
  • Develop and manage budgets, forecasting revenue, expenses, and profitability.
  • Monitor financial performance, analyze variances, and implement strategies to achieve financial goals.
  • Manage inventory levels and implement systems to control food and beverage costs.
  • Coordinate with suppliers to ensure timely and cost-effective replenishment of stock.
  • Develop and execute marketing strategies to drive customer traffic and increase revenue.
  • Work with hotel administration to meet group dining needs
  • Analyze sales data, trends, and customer feedback to identify areas for improvement.
  • Prepare regular reports for management, outlining performance metrics and strategic recommendations.
  • Build and maintain positive relationships within the local community.

Staff Management:

  • Recruit, train, and supervise staff members, including front-of-house and kitchen personnel.
  • Foster a positive work environment, promote teamwork, and ensure staff adherence to company policies.
  • Ensure compliance with local, state, and federal regulations, including health and safety standards.
  • Manage licensing requirements and inspections to maintain legal operations.

Menu Development & Food Quality:

  • Collaborate with Heirloom corporate to maintain consistency and brand standard in menus. 
  • Train chefs and culinary staff to brand standard, 
  • Determine pricing strategies based on cost analysis, market trends, and customer preferences.
  • Monitor food quality, presentation, and consistency to uphold the restaurant's standards.
  • Implement and enforce health and safety regulations to ensure a clean and safe dining environment.

Customer Service:

  • Greet customers with a friendly and welcoming attitude.
  • Provide excellent customer service by answering questions, offering assistance, and processing orders accurately.
  • Receive and process customer orders, ensuring accuracy in item selection and pricing.
  • Enter orders into the point-of-sale (POS) system promptly and efficiently.
  • Address customer concerns or issues related to orders, payments, or service.
  • Collaborate with senior management to resolve more complex problems.

Cash Handling:

  • Handle cash, credit cards, and other forms of payment accurately.
  • Provide change to customers and process transactions in accordance with established procedures.
  • Follow cash handling policies and procedures to prevent discrepancies.
  • Adhere to security measures to safeguard against theft or fraud.
  • Complete end-of-shift procedures, including balancing cash registers and preparing reports.
  • Secure cash and close out the POS system accurately.


Requirements

The ideal candidate will have proven experience in restaurant management, with a focus on leadership and operational excellence.  They will have a culinary background, experience in a fast paced kitchen, and with fine dining service experience.  Most of all, the ideal candidate will truly enjoy hospitality and creating memorable experiences for HB on Madison's guests.  

  • Culinary background and experience in a restaurant kitchen very desirable
  • Fine dining service background
  • Strong financial acumen and experience in budgeting and financial analysis.
  • Excellent communication and interpersonal skills.
  • Proficient in restaurant management software and computer applications.
  • Ability to make strategic decisions and lead a diverse team.
  • Flexibility to work evenings, weekends, and holidays.
  • Must be available to start training by June 15
