The JOB:  Director of Banquets

The LaPlaya Food and Beverage Team is looking for a high energy, detail oriented individual to oversee and direct our banquets, events, and daily operations within all areas of the Resort in elevated and seamless manner.   If you have experience in leading a banquet team in executing events of up to 200 guests, apply today to work for a hospitality leader in paradise as a Director of Banquets.     

Requirements
  • Coordinates and supervises the execution of all banquet functions to ensure that all services, menu items and activities requested/indicated on the BEO’s are provided
  • Oversee all aspects of the daily operation of the hotel's banquet operation including opening and closing of all events as necessary
  • Audit events and team efforts for each event to review improvements for future success
  • Supervise all Banquet team members
  • Interview, hire and train all new banquet team members
  • Maintain-up-to-date details on banquet functions and communicate to all team members and captains
  • Review menu/service with Catering and Culinary Leaders
  • Build and monitor budgets/forecasts and review financial results daily to ensure that expenditures are aligned with revenue goals
  • Develop departmental budget and goals
  • Attend BEO meetings
  • Schedule and coordinate Banquet events
  • Ensure appropriate and elevated setup of events
  • Ensure that all appropriate charges are billed correctly to each event and forwarded to the accounting department for billing
  • Analyze financial and operating information, forecasting revenues and expenses
  • Develop detailed plans for each catered event in conjunction with Food & Beverage, Executive Chef, and other department heads
  • Hold pre-function meeting with servers to ensure smooth, efficient service, assign server stations and coordinate the timing of courses
  • Conducts after-event evaluations to improve quality and efficiency of banquet functions
  • Diagram buffet tables, guest tables and other function room set-up needs for special events
  • Ensure the cleanliness, sanitation and proper set up of all banquet and meeting rooms and check maintenance of all equipment in these areas prior to the event including all back of house areas used in the banquet and event spaces
  • Maintain banquet liquor, beer, wine and tobacco inventories, and ensuring appropriate inventory levels through purchase/requisition/inventory control
  • Maintain bottle and pour cost information as well as ensure the accuracy of the regular inventories of these products
  • Assist in implementing and monitoring internal controls of banquet
  • Be an active leader in daily and weekly training to ensure the highest form of elevated services
  • Place purchase orders as needed for banquet needs and maintain control of invoices and costs
  • Complete the weekly schedule for all banquet teams
  • Review and submit payroll for banquet team
  • Ensure tips are accurately distributed and balanced to be submitted weekly 
  • Review proper controls to enforce productivity within the division 


Secondary Functions:

  • Assist all other F&B operations within the Resort as needed during down season where events and banquets are not held

Education & Experience:

  • 3 years experience in Banquet management and supervision with a strong preference for Director experience
  • 3 years experience in Food & Beverage
  • Experience in luxury hotels & resorts with meeting space of 8,000 or more. Strong preference with Resort Beach background
  • Proficient in computer applications such as Excel, Word, Outlook and PowerPoint, Micros, Hotel Effectiveness, and other financial software
  • Strong written and verbal communication skills

Physical Demands:

  • Ability to work long hours as needed including late nights, weekends, and holidays
  • Ability to lift 25 lbs.
  • Ability to stand for extended periods of time
  • Ability to squat and bend
  • Ability to work in the outdoor environment including Florida summers

 Mental Demands:

  • Read, write and speak English fluently. Preference for Spanish as second language or other languages 
  • Ability to communicate effectively with the public and other colleague

Salary Description
Starting at $80K
