A brief look at what you will do:


The F&B Analyst is the analytical engine behind bartaco’s bar program as well as F&B platforms. This is a new

role built to bring data rigor, financial precision, and technology-forward thinking to an operation that spans 32

restaurants and hundreds of SKUs. You will own the numbers — not report on them to someone who owns

them, but genuinely own them — and turn raw data into decisions that move the business.

This role sits at the intersection of finance, operations, and technology. You’ll work closely with the Beverage

Director on operational context and to ensure the Beverage Director maximizes time in restaurants and not on a

laptop; with the Director of Purchasing on vendor cost intelligence; and with the Controller’s team to ensure F&B 

cost reporting integrates cleanly into period-end close. If you love a clean spreadsheet, get excited about AI- driven automation, and believe that bad data costs real money, this role was built for you.


Responsibilities:

Actual vs. Theoretical (AvT) Accountability

  • Own AvT analysis for the beverage and culinary program — you are the single point of accountability for identifying, investigating, and reporting variance across all locations 
  • Partner with the Beverage Director to provide operational context for variance and drive field-level corrective action 
  • Partner with the Director of Purchasing to provide operational context and insights that drive cost performance 
  • Establish and maintain AvT benchmarks by category, daypart, and unit type 
  • Financial Reporting & Analysis 
  • Produce and distribute weekly prime cost reporting with beverage-specific commentary — not just numbers, but insight
  • Build and maintain beverage mix analysis by daypart, category (liquor / beer / wine / NA), and location to identify trends, outliers, and opportunities 
  • Support period-end close processes in coordination with the Controller’s team, providing accurate 
  • Beverage cost data and variance explanation that integrates with broader F&B cost reporting 
  • Monitor cost fluctuations, flag material changes to purchasing and finance, and recommend mitigation strategies

Recipe Costing

  • Cost all new recipes at the time of development — providing margin analysis and flagging items that don’t meet brand thresholds before they launch 
  • Maintain a living recipe cost database that reflects current ingredient pricing and is updated with each vendor price change 
  • Partner with the Director of Purchasing on cost negotiations by providing data on recipe sensitivity to ingredient price movements

Inventory Management

  • Own the brand’s approach to F&B inventory management — methodology, cycle count cadence, variance thresholds, and corrective action protocols with a specific focus on the beverage program 
  • Partner with unit-level bar managers to ensure inventory processes are understood, consistently executed, and producing reliable data

Technology & Systems Management

  • Serve as the primary administrator for Craftable, Bevager, or equivalent beverage management platforms owning configuration, user access, recipe builds, and daily data integrity 
  • Maintain active integration between the beverage platform and POS systems (Toast, Micros) to ensure sales data flows accurately into cost reporting 
  • Identify and implement AI-driven enhancements to reporting, data processing, and anomaly detection within the beverage analytics stack 
  • Act as the bridge between beverage operations and technology — translating operator needs into system solutions 
  • Manage software system user access, onboarding of new locations and vendors, and platform settings across departments


Requirements

WHAT YOU BRING:

  • Bachelor’s degree in Finance, Accounting, Economics, Statistics, or a related field
  • 3+ years of experience in financial analysis, restaurant analytics, or food & beverage operations with a
  • strong quantitative focus
  • Proficiency in Excel or Google Sheets at an advanced level; SQL or Python a strong plus
  • Experience with beverage management platforms (Craftable, Bevager, or similar) and POS systems (Toast, Micros, Aloha)
  • Demonstrated ability to turn complex data into clear, actionable narratives for non-financial stakeholders
  • Curiosity about AI tools and automation and then actions to implement and improve systems and functions through the use of AI and other technologies
  • Efficiency and finding excitement in working “for operations”
  • High attention to detail with a low tolerance for data that doesn’t add up
  • Ability to work independently and manage multiple reporting deadlines without dropping balls 
  • Never accepting “something is off” as an answer – and then going and getting the answer and resolving the problem
