We are looking for a detail-oriented and passionate Sous Chef to join our team! The Sous Chef is is responsible for the daily oversight of all kitchen operations within the Arbor kitchens, ensuring safe and timely meal preparation. They will supervise the team, assist with meal preparations, and will be responsible for the budget and purchasing food supplies. The Sous Chef will embody our core values: caring, empowerment, integrity, and commitment.
Responsibilities include, but are not limited to:
- Kitchen responsibilities: ensure the quality of food preparations, monitor regular and therapeutic diets to meet specialized resident needs, participates in menu planning according to resident preferences, substitution lists, therapeutic diets and industry trends. Will maintain their ServSafe certification. Complies with safety procedures, maintain a sanitary and clean environment, and report any potential hazards immediately.
- Supervisor responsibilities: Preparing schedules to ensure adequate staffing needs, participate in interviews and training, and with disciplinary actions. Oversees and monitors the budget of food and supplies, forecasting and maintaining accurate food waste records, inventory and equipment records to ensure the timely purchase of food, supplies and equipment.
- All other duties assigned include, but not limited to, enhancing the Resident Experience.
- High School Diploma or GED
- 3-5 years of experience in food service management. Prior experience in a healthcare food setting is highly preferred
- Maintain all certifications necessary for employment. Commits to continually improving skills through educational opportunities.
- Is courteous and cooperative with residents, families, co-workers, management, and other staff. Exhibits professionalism in conduct and appearance.
- Knowledge of food storage/food hierarchy and kitchen sanitation. Maintains a current knowledge of applicable federal, state, or other regulations.
- Complies with GR safety policies and procedures. Reports safety hazards and injuries immediately. Provides emergency assistance to residents, visitors, or employees following proper procedures.
- Must perform simple arithmetic to handle and understand measurements and recipe conversions.
- Needs proficient knife skills, knowledge of protein fabrication. Cooking skills include frying, poaching, baking, roasting, stewing, braising, sautéing, grilling, and steaming
