Chef de Cuisine - Healthcare

Galloway Ridge is an upscale continuing care retirement community offering top-quality care in a warm, welcoming environment and we are looking for a Chef de Cuisine to join our team! The Chef de Cuisine is responsible for the daily oversight of all kitchen operations within the Arbor kitchens, ensuring safe and timely meal preparation. They will help food production personnel, assist with producing food as needed, and will be responsible for the budget and purchasing supplies. The Chef will follow GR policies and procedures, state and federal food regulations. They will embody our core values: caring, empowering, integrity, and commitment. 



Responsibilities include, but are not limited to:

  • Kitchen Responsibilities: plan and prepares food per standard recipes with the ability to adjust amount, produce standardized recipes and organize for production, ensures the quality of food preparation along with plate presentation, collaborate with the Director of Resident Experience to adapt menus and specials based on resident feedback. Complies with applicable safety policies and procedures and maintains a sanitary and clean environment. 
  • Administrative Responsibilities: prepares schedule with adequate staffing and participating in interviews, training, performance, and disciplinary actions with the staff. Inspects storage areas along with keeping inventory counts. Oversees and monitors the budget of food and supplies, forecasting and maintaining accurate food waste records, inventory and equipment records to ensure the timely purchase of food, supplies and equipment.  
  • Training and Development: Participates in all BOH training opportunities, in-services, and line-up sessions. Completes Relias training and maintains current ServSafe certification. Maintains current knowledge of federal, state, and other regulations applicable to the position. 
  • All other duties assigned include, but are not limited to, enhancing the Resident Experience.  
Requirements
  • High School Diploma or GED, culinary degree or culinary training preferred.
  • Active ServSafe certification or ability to obtain certification 
  • Continuous growth with certifications and educational opportunities. 
  • Knowledge of food storage/food hierarchy and kitchen sanitation. Maintains a current knowledge of applicable federal, state, or other regulations. 
  • Complies with GR safety policies and procedures. Reports safety hazards and injuries immediately. Provides emergency assistance to residents, visitors, or employees following proper procedures. 
  • Is courteous and cooperative with residents, families, co-workers, management, and other staff. Exhibits professionalism in conduct and appearance. 
  • Must perform simple arithmetic to handle and understand measurements and recipe conversions. 
  • Needs proficient knife skills, knowledge of protein fabrication. Cooking skills include frying, poaching, baking, roasting, stewing, braising, sautéing, grilling, and steaming.
