Position Summary

The Senior Sanitation Supervisor provides leadership for all overnight sanitation operations within our airline catering facility. This role is responsible for supervising sanitation teams, managing dishwashing operations, maintaining sanitation schedules, ensuring food safety compliance, and supporting production through a clean, organized, and audit-ready facility.

This is a hands-on leadership role requiring extensive experience with commercial dish machines, sanitation chemicals, food safety regulations, equipment maintenance, and employee development. The successful candidate leads by example, promotes accountability, and ensures every area of the facility meets Abby’s high standards before the next production day begins.

Key Responsibilities

Sanitation Operations

Lead all overnight sanitation activities throughout the production facility.
Execute and oversee the Master Sanitation Schedule.
Ensure all production areas, dish rooms, equipment, storage areas, and common spaces are cleaned and sanitized to company standards.
Verify sanitation procedures comply with HACCP, FDA, OSHA, GMP, and company food safety requirements.
Maintain an audit-ready facility at all times.

Dish Room & Equipment Operations

Supervise all commercial dishwashing operations.
Ensure proper operation of industrial dish machines, pot washing systems, and sanitation equipment.
Monitor chemical concentrations, water temperatures, and machine performance.
Coordinate preventive maintenance and report equipment issues promptly.
Train employees on proper dish machine operation, cleaning procedures, and equipment safety.

Food Safety & Regulatory Compliance

Maintain all sanitation documentation and cleaning records.
Ensure proper chemical handling, storage, labeling, and inventory control.
Oversee allergen control and cross-contamination prevention.
Conduct routine sanitation inspections and corrective actions.
Support internal, customer, and regulatory audits.

Leadership & Team Development

Lead, coach, motivate, and develop overnight sanitation team members.
Create employee schedules based on operational needs.
Conduct shift meetings and communicate daily priorities.
Monitor attendance, productivity, and labor efficiency.
Train new employees and reinforce company safety procedures.
Foster a culture of accountability, teamwork, and continuous improvement.

Operational Excellence

Continuously improve sanitation processes and workflow.
Monitor labor costs while maintaining operational effectiveness.
Partner with Production, Warehouse, Food Safety, and Maintenance teams to support daily operations.
Ensure all sanitation supplies, chemicals, PPE, and cleaning equipment remain properly stocked.
Maintain organized chemical storage and inventory controls.

Reporting & Documentation

Complete shift reports and sanitation documentation accurately.
Investigate workplace incidents and complete required reports.
Track sanitation performance metrics and identify improvement opportunities.
Communicate operational concerns and equipment needs to management.

Requirements

Qualifications 

  • Minimum 5 years of sanitation leadership experience in food manufacturing, airline catering, hospitality, or commercial food production. 
  • Extensive experience operating and supervising commercial dish machines and pot washing operations. 
  • Strong knowledge of sanitation chemicals, chemical safety, and cleaning procedures. 
  • Experience managing sanitation teams in a high-volume production environment. 
  • Working knowledge of HACCP, FDA, OSHA, GMP, and food safety regulations. 
  • Strong leadership, coaching, and employee development skills.
  • Excellent organizational, communication, and problem-solving abilities. 
  • Basic computer proficiency, including Microsoft Office and email.   

Preferred 

  • Airline catering experience. 
  • ServSafe Manager Certification. 
  • HACCP Certification. 
  • OSHA Certification. 
  • Bilingual English/Spanish. 
  • Experience with sanitation audits and regulatory inspections. 

Physical Requirements 

  • Ability to work the overnight shift from 10:00 PM – 8:00 AM. 
  • Ability to stand and walk for extended periods. Frequently lift up to 50 pounds. 
  • Ability to bend, push, pull, climb, and work around industrial sanitation equipment. 
  • Comfortable working in wet, humid, refrigerated, and freezer environments. 
  • Ability to safely handle commercial cleaning chemicals and PPE.
