Description

PREP COOK / PIZZA COOK  The Prep Cook / Pizza Cook at Ottine Mineral Springs plays a dual role in supporting daily culinary operations. This position is responsible for executing essential kitchen prep tasks—such as chopping, slicing, portioning, and ingredient management—and specializes in crafting, baking, and serving innovative, nutritious, and high-quality pizzas. The ideal candidate ensures the kitchen is fully set up and organized for service while maintaining the resort’s commitment to wellness, exceptional guest experiences, and strict health and safety standards. 


This position requires some weekends and holidays. 


RESPONSIBILITIES: 

  • Prepare ingredients for daily service, including chopping, slicing, dicing, marinating, and portioning. 
  • Follow recipes and prep lists provided by the Executive Chef or Kitchen Supervisor. 
  • Set up stations and ensure all ingredients are ready for service before it begins. 
  • Maintain cleanliness and organization of kitchen prep areas, walk-ins, and storage areas. 
  • Label, date, and store all food items properly following FIFO (First In, First Out) practices. 
  • Assist with receiving, inspecting, and properly storing incoming deliveries. 
  • Support basic batch-cooking tasks as needed (e.g., stocks, bases, and supporting sauces). 
  • Assist with end-of-shift cleaning, breakdown, and resetting the kitchen for the next service. 
  • Prepare pizza dough and sauces from scratch, emphasizing fresh, wholesome, and nutritious ingredients. 
  • Assist in creating a diverse menu of pizzas that focus on nutritional value without compromising flavor. 
  • Operate and maintain the pizza oven, monitor cooking times, and adjust temperatures for perfect baking results. 
  • Ensure all pizzas are prepared with accuracy and presented beautifully. 
  • Manage pizza station inventory, including ordering and restocking supplies as needed. 
  • Conduct taste tests and adjust recipes based on feedback to enhance quality. 
  • Support dishwashing operations as needed when a dedicated dishwasher is unavailable. 
  • Maintain organization of dirty dish stations and assist with the timely restocking and organization of clean dishes, utensils, and equipment. 
  • Ensure dish areas remain clean, organized, and operationally efficient throughout the shift. 
  • Approach all guests and employees in a friendly, service-oriented, and professional manner. 
  • Address any guest concerns, dietary needs, or special requests promptly and efficiently. 
  • Work closely with other kitchen staff and Food + Beverage Attendants to ensure seamless service and timely food delivery. 
  • Adhere to the resort's dress code policy and maintain professional communication skills. 
  • Have knowledge of all resort facilities, hours of operation, restaurants, pools, and event spaces to assist guests when needed. 
  • Attend required staff meetings and participate in training sessions to continuously improve service skills and product knowledge. 
  • Perform other related duties and undertake various functions as assigned by changing operational demands. 

Due to changing operational demands, it may be necessary to undertake various functions that are not specifically related to this position. This individual may be required to carry out additional tasks and duties as needed or as directed. Additionally, employee responsibilities and job descriptions are subject to review and modification. 

Requirements

 

  • Must have availability on weekends and holidays. 
  • High School diploma or general education degree (GED) preferred. 
  • Previous experience in kitchen food prep, pizza making, or a similar culinary role. 
  • Six (6) months of related experience in the hospitality or service industry preferred. 
  • Basic knowledge of kitchen equipment, food safety, and foundational knife skills. 
  • Valid Texas Food Handler card and TABC certification. 
  • CPR and First Aid certification (or the willingness to be trained upon hire). 
  • Must be able to speak, read, write, and understand English effectively. 
  • Reliability, punctuality, and strong work ethic (ability to work early morning prep shifts as well as evening/weekend pizza shifts). 
  • Ability to work in a fast-paced environment while maintaining high attention to detail and patience under pressure. 
  • Knowledge of healthy cooking practices and a genuine interest in wellness cuisines. 
  • Strong manual dexterity, auditory, and visual skills to follow written and verbal instructions accurately. 
  • Ability to walk, stand, and move about the resort (both indoors and outdoors) for 8 or more hours per day. 
  • Comfort working in an indoor/outdoor use space. 
  • Ability to sit, reach, lift, bend, kneel, stoop, climb stairs, push, and pull items weighing up to 75 pounds.
