General Summary:
This is a salaried, exempt level position that supports the Executive Chef, Executive Sous Chef, and all Clubhouse management staff in the endeavor to provide the highest quality service and product to satisfy Houston Country Club clientele.
Responsibilities:
· Assists Chefs in managing all food facilities.
· Informs Executive Chef regarding daily changes and projected business.
· Participates as necessary in weekly menu and banquet planning; attends weekly Food & Beverage meetings as necessary.
· Follows approved work schedule.
· Coordinates with other department leaders, assuring all employees are present, are knowledgeable in that day’s duties, and are performing their duties in accordance with HCC standard.
· Follows up by frequently checking employees to see that assigned duties are being performed correctly.
· Checks employees’ stations upon completion of their shifts, assuring that closing lists have been adhered to, both breaking down procedures and cleaning duties
· Keeps constant eye on portion sizes and plate presentation.
· Assures a secure workplace by maintaining safety standards and monitoring inventory levels.
· Enforces proper food handling procedures, minimizing public health risk and preventing product waste.
· Is familiar with all aspects of the kitchen and is ready to perform any job when needed.
· Communicates respectfully and professionally with culinary team members to achieve goals.
· May represent the culinary team on Club committees such as safety, employee relations, etc.
· Assists with hiring, training and disciplining staff.
· Assists with scheduling and execution of payroll as necessary.
Education, Skills and Experience:
· Able to read, follow and direct orders, lists, and recipes.
· Culinary arts training or documented work history equivalent with demonstrated working knowledge of the kitchen, tools, and equipment.
· Proven leadership skills; ability to train and motivate at the line level.
· Two years’ experience in a comparable position and setting
· Exceptional integrity, professionalism and ability to communicate with staff, Culinary Leadership Team and Club management.
· Willingness to foster a positive, professional and inclusive environment. Inherent desire to support the growth and professional creativity of staff.
All candidates will be subject to a pre-employment background investigation and drug screen.
Hours and schedule will vary weekly depending the demands of Club business. The ability to work varying shifts, including nights, weekends, and holidays is required.
