The Sushi Cook is responsible for preparing and presenting high-quality sushi dishes, including rolls, sashimi, and nigiri, with precision and artistry. This role requires deep knowledge of sushi preparation techniques, food safety standards, and a commitment to excellence in both taste and presentation. 

Requirements
  • Exemplify the Triple T Hospitality Experience: Dedicate oneself to delivering GREAT guest service, consistently going above and beyond for both team members and guests. 
  • Prepare sushi menu items including rolls, nigiri, sashimi, and specialty dishes according to established recipes and presentation standards. 
  • Ensure freshness and quality of all sushi ingredients, including fish, vegetables, and rice. 
  • Maintain proper storage and handling of raw fish and other perishables. 
  • Monitor and maintain sushi station cleanliness and organization. 
  • Follow portion control guidelines and minimize waste. 
  • Conduct regular inventory checks and communicate shortages to the Assistant Kitchen Manager. 
  • Maintain a clean and sanitary work environment in compliance with health and safety regulations. 
  • Collaborate with kitchen and front-of-house staff to ensure timely and accurate order fulfillment. 
  • Assist in training new sushi staff members. 
  • Stay current with sushi trends and techniques to enhance menu offerings. 

KNOWLEDGE, SKILLS AND ABILITIES REQUIRED: 

  • Prior experience as a sushi cook or in a sushi-focused kitchen environment. 
  • Proficiency in sushi preparation techniques including knife skills, rice preparation, and fish handling. 
  • Strong attention to detail and artistic presentation. 
  • Knowledge of food safety standards, especially regarding raw fish. 
  • Ability to work in a fast-paced, high-volume restaurant setting. 
  • Familiarity with sushi tools and equipment (e.g., sushi knives, bamboo mats). 
  • Excellent communication and teamwork skills. 
  • Ability to stand for extended periods and lift heavy objects as needed.
