Stone Brewing World Bistro & Gardens – Escondido is seeking an experienced Banquet Cook (Line Cook II) to support our high-volume events, catering, and banquet operations. This is a great opportunity for a culinary professional with a passion for large-scale food production, precision execution, and elevated presentation.
In this role, you’ll be responsible for preparing and executing banquet-style menus, including both hot and cold items, for a wide range of events—from plated dinners to buffet service. You’ll work behind the scenes to ensure seamless event execution, consistent quality, and an exceptional guest experience.
What You’ll Do
- Prepare and cook a variety of menu items including meats, seafood, poultry, vegetables, sauces, and composed dishes
- Execute batch cooking and high-volume food production for banquet and catered events
- Prepare both hot and cold items, including garde manger-style dishes
- Follow recipes and plating standards to ensure consistency, quality, and presentation
- Execute mise en place for large-scale events, ensuring readiness for service
- Assist in plate assembly, garnishing, and buffet presentation
- Set up, maintain, and replenish buffet stations for optimal guest experience
- Coordinate closely with front-of-house (FOH) and events teams to ensure smooth service timing
- Maintain organization, labeling, storage, and food safety standards in a production kitchen environment

What We’re Looking For
- 4+ years of experience in a high-volume kitchen, with a focus on banquet, catering, or production cooking
- Proven experience with large-scale event execution and batch cooking
- Strong knowledge of garde manger, cold prep, and presentation techniques
- Ability to manage timing, coordination, and multiple priorities in an event-driven environment
- High attention to detail and consistency in plating and food quality
- Ability to work collaboratively with culinary and events teams
- Strong organizational skills and commitment to food safety and sanitation standards
