THE JOB:
The Chef de Cuisine of Eighty Ocean Kitchen and Bar at Jekyll Ocean Club is a key member of our Food & Beverage leadership team, responsible for driving culinary excellence at one of our signature oceanfront dining experiences.
This role leads, mentors, and develops the Eighty Ocean culinary team while ensuring an exceptional dining experience for every guest. The Chef de Cuisine brings together strong culinary expertise, creativity, leadership, and operational discipline to consistently deliver the quality and service our guests expect.
Working alongside the Sous Chefs and Food & Beverage leadership team, you will oversee the day-to-day kitchen operation, including food quality and presentation, labor and food costs, inventory control, sanitation, organization, and overall kitchen standards. You will recruit, train, coach, and develop culinary team members while creating a positive, professional, and high-performing kitchen culture.
Creativity is an important part of this role. The Chef de Cuisine will be actively involved in menu development, seasonal offerings, daily specials, special events, buyouts, and unique culinary experiences, while maintaining consistency and strong cost controls.
This is a hands-on leadership position for a Chef who enjoys being in the kitchen, developing people, and creating memorable dining experiences. Minimum 3–5 years of progressive culinary experience, preferably in an upscale, luxury hotel, resort, or fine-dining environment
- Previous experience as a Chef de Cuisine, Executive Sous Chef, Sous Chef, or similar culinary leadership role
- Strong knowledge of kitchen operations, culinary techniques, food preparation, and presentation
- Proven ability to lead, train, mentor, and develop a high-performing culinary team

- Ability to maintain high standards for food quality, consistency, sanitation, and kitchen organization

- Creative, hands-on leadership style with a passion for delivering exceptional culinary experiences
- Ability to collaborate effectively with Food & Beverage leadership and front-of-house teams
- Flexible availability, including evenings, weekends, and holidays
- Culinary degree or equivalent professional culinary experience preferred
- ServSafe certification preferred or ability to obtain certification as required
