As a Team Member Dining Room Prep Cook at Little Creek Casino Resort, you play an essential role in preparing and serving high-quality meals for our employees in a fast-paced, high-volume kitchen. This position focuses on consistency, teamwork, and food safety while supporting a positive dining experience for our team members and contributing to our reputation as a great place to work.
ESSENTIAL DUTIES AND RESPONSIBILITIES:
- Performs kitchen production work to support line cooks and the daily production plan by preparing ingredients, portioning products, and executing batch work according to established specifications.
- Follows standardized recipes, preparation methods, and portioning guidelines provided by culinary leadership.
- Prepares ingredients in accurate quantities based on the menu, production sheets, and forecasted business needs.
- Ensure proper handling, washing, cutting, measuring, labeling, and storage of ingredients to support quality, sanitation, and timely service.
- Maintains awareness of food safety requirements by upholding correct time and temperature controls, preventing cross contamination, and practicing proper storage rotation.
- Supports all assigned areas with flexibility to move between production tasks, cold prep, hot prep, and other stations as directed to meet business demands.
- Maintains a clean, organized, and hygienic work environment in compliance with sanitation standards and clean as you go expectations.
- Uses kitchen equipment safely and efficiently in accordance with training and safety guidelines.
- Manages time effectively to complete prep lists, support service needs, and meet cleaning responsibilities.
- Assists with basic preparation for menu items and daily specials in the direction of culinary leadership.
- Collaborates closely with the kitchen team to support smooth operations and efficient handoff of prepared items to line cooks.
- Maintains freezers, walk ins, and dry storage in proper cleanliness, organization, and rotation. Keeps all work areas stocked, labeled, and sanitized throughout the shift.
- Completes daily cleaning duties as outlined in the Master Cleaning Schedule. Adheres to all company policies and procedures, including health, safety, and sanitation standards.
Additional Responsibilities:
- Supports the maintenance of kitchen documents and records by completing assigned prep sheets, temperature logs, labeling tasks, and compliance documentation accurately.
- Provides input regarding product levels, prep needs, and station readiness to assist culinary leadership with planning and scheduling considerations.
- Stays informed on basic culinary techniques, ingredient handling, and preparation methods to support consistency and continuous improvement.
- Participate in ongoing training and continued education to strengthen culinary skills, safety knowledge, and operational competence.
- Performs other duties as assigned to maintain smooth operations, effective teamwork, and alignment with departmental standards.

Requirements
EDUCATION and/or EXPERIENCE:
- A high school diploma, GED required
- One year of line or production cooking experience preferred
- Demonstrated knowledge of food preparation and presentation
CERTIFICATES, LICENSES, REGISTRATIONS:
- Class II gaming license issued from the Washing State Gaming Commission,
- Current Washington State Food Worker Card
