Position Summary
The Utility Cook supports the kitchen team through dishwashing, sanitation, organization, and basic food preparation. This role is critical to maintaining kitchen flow, cleanliness, food safety, and operational readiness during all service periods. Utility Cooks help ensure the restaurant operates efficiently by supporting prep production, maintaining organized workspaces, and keeping all kitchen equipment and dishware clean and available for service.
Food Preparation
- Peel and cut vegetables, fruit, and meat required for preparation of food items including (but not limited to) salads, dressings, garnishes, desserts, and main ingredients.
- Perform routine and repetitive tasks under the direction of leadership.
- Understand and follow kitchen recipe/prep systems.
- Maintain standards for food production and handling, cooking, housekeeping, sanitation, and safety.
Dishwashing & Sanitation
- Load, run, and unload the dish machine.
- Keep the dish machine clean and report any functional or mechanical problems immediately.
- Monitor dish machine water temperature and chemicals to ensure a sanitary wash cycle.
- Wash and store all tableware and kitchenware.
- Keep the dish room clean and organized.
- Bag and haul dish room trash to the dumpster at designated times.
Cleanliness & Standards
- Clean work area, equipment, utensils, dishes, and silverware and ensure proper disposal of food waste.
- Clean food preparation and production areas as required.
- Maintain organized storage areas, shelving, and chemical stations according to Hawkers standards.
- Always maintain a high standard of personal hygiene and cleanliness while on shift.
Team & Culture
- Assist in training new and existing team members in proper procedures and guidelines.
- Be a team player — help fellow team members at every opportunity.
- Demonstrate schedule flexibility and availability to fill in as needed to ensure the smooth and efficient operation of the restaurant.
- Must take and pass all required training courses and assessments, as well as ongoing continuous training.
- Perform additional duties as directed by kitchen leadership.
Qualifications
- Must be at least 18 years of age.
- Previous kitchen, dishwashing, or food preparation experience preferred but not required.
- Ability to work a flexible schedule including evenings, weekends, and holidays.
- Must have or be willing to obtain a Food Handlers Certification.
- Understanding of and commitment to OSHA and HACCP compliance standards.
Physical Requirements
- Must be able to stand, walk, bend, squat, and reach above shoulder level for the duration of a shift.
- Must be comfortable working in an environment with exposure to extreme heat and cold temperatures (ovens, dish machines, walk-in coolers/freezers).
- Must be able to lift and carry up to 50 lbs. and work in a fast-paced, high-activity kitchen environment.
