JOB SUMMARY: Responsible for fabricating, cooking, and serving all fruits, vegetables, cereals, grains, bean, tubers, and farinaceous products in the kitchen of a foodservice establishment. Identifies, portions, and prepares the vegetable station food items. Other duties include plating and garnishing cooked items, and preparing appropriate garnishes for vegetables and related foods. Responsible for maintaining a sanitary work station.


QUALIFICATIONS:

Required skills and knowledge:

  •  Food handler permit
  • Strong line cooking skills.
  • Two years high volume experience.
  • Ability to take initiative.
  • Current knowledge of occupational safety issues.
  • Excellent interpersonal skills.
  • Possess a positive attitude.
  • Ability to work in a team environment.
  • Must be able to follow instructions and follow food preparation sheets.
  • Pass NRWC pre-employment testing.
  • Ability to work peak business hours.
  • Ability to obtain a Class II Gaming License.

Preferred skill and knowledge:

  • Able to work under time constraints to produce food according to established standards.

PHYSICAL REQUIREMENTS: 

  • Must be able to bend, stoop, lift, and carry items weighing up to 50 pounds on a regular and continuing basis.
  • Must be able to stand and/or walk for long periods of time and move from area to area in the kitchen.
  • Ability to tolerate a smoke-filled environment.
  • Required to be able to reach with hands and arms. 
Requirements

ESSENTIAL FUNCTIONS OF THE JOB:

  • Comply with all portion sizes, quality standards, department rules, policies, and procedures.
  • Identify and select fruits, vegetables, cereals, grains, beans, tubers, and farinaceous products for cooking.
  • Prepare items for cooking by peeling, paring, coring, portioning, washing, sectioning, zesting, cutting, or scoring.
  • Prepare garnishes for vegetable station items.
  • Cook vegetable items by braising, poaching, simmering, boiling, frying, baking, roasting, stir-frying, blanching, or boiling.
  • Plate vegetable items along with appropriate garnish or sauce.
  • Maintain a sanitary work station.
  • Prepare dough and fabricates pastas.
  • Select and use knives, hand tools, utensils, and equipment to portion, cut, slice, mash, puree, whip, beat, roll, stuff, maintain holding temperature, cook, or otherwise produce food in the vegetable station.
  • Perform other duties as assigned.
