 JOB SUMMARY


The Bistro Cook is responsible for preparing and presenting high-quality food while supporting the overall operation of the hotel’s Bistro. This is a multi-skilled position within a small, fast-paced food and beverage environment and may include food preparation, cooking, guest service, cashiering, stocking, cleaning, and beverage service.


The Bistro Cook must be comfortable working independently at times while maintaining food quality, cleanliness, safety, and an exceptional guest experience. This position requires a strong sense of ownership, reliability, and attention to detail and works closely with other Bistro and hotel associates to ensure efficient service.


The ideal candidate is someone who enjoys both preparing great food and interacting with guests and understands that every Bistro interaction is part of the overall hotel experience.


REQUIREMENTS

EDUCATION AND EXPERIENCE

  • High school diploma or equivalent preferred.
  • Previous cooking, food preparation, restaurant, hotel, café, or food and beverage experience preferred.
  • Experience working in a fast-paced food service environment preferred.
  • Previous Starbucks or barista experience is a plus but not required.
  • Food Handler certification as required by applicable state or local regulations.
  • Additional food safety certification may be required based on position responsibilities or applicable regulations.

 JOB DUTIES & FUNCTIONS

  • Comply at all times with Avion Hospitality, brand, and applicable food safety standards and regulations to promote safe and efficient hotel operations.
  • Prepare, cook, and present Bistro menu items according to established recipes, portions, presentation standards, and brand requirements.
  • Follow proper food preparation techniques and ensure consistency in quality, taste, temperature, and presentation.
  • Complete food preparation and production based on anticipated business levels and established par levels.
  • Maintain thorough knowledge of Bistro menus, ingredients, preparation methods, specials, and available substitutions.
  • Ensure all food is properly labeled, dated, rotated, stored, and maintained at required temperatures.
  • Follow established food safety and sanitation procedures, including proper handwashing, glove use, cross-contamination prevention, and temperature controls.
  • Complete required food temperature, sanitation, and other operational logs accurately and timely.
  • Maintain a clean, organized, and sanitary kitchen, Bistro, storage, and food preparation environment throughout the shift.
  • Clean and sanitize workstations, equipment, utensils, cookware, and food preparation surfaces according to established procedures.
  • Set up and break down cooking and food preparation stations for each shift.
  • Monitor food and supply inventory and communicate replenishment or ordering needs to the appropriate supervisor or manager.
  • Receive, inspect, properly store, and rotate food and beverage deliveries as assigned.
  • Minimize food waste by following proper portioning, preparation, storage, and inventory practices.
  • Provide friendly, attentive, and professional service when interacting with guests.
  • Take guest food and beverage orders accurately when assigned and assist guests with menu questions.
  • Operate the P.O.S. system and accurately process cash, credit card, room charge, and other approved transactions as needed.
  • Assist with Starbucks beverage preparation and service where applicable and when appropriately trained.
  • Maintain applicable brand standards when preparing and serving Starbucks beverages.
  • Assist with stocking and maintaining the Bistro Market, beverage stations, condiment areas, and other guest-facing food and beverage areas.
  • Maintain an organized, stocked, and clean Bistro throughout the shift, including tables, counters, service areas, and guest-facing spaces.
  • Perform opening and closing procedures and assigned side work.
  • Follow all applicable health department requirements and maintain required Food Handler or food safety certifications.
  • Follow established procedures regarding allergens and guest dietary requests and communicate questions or concerns to management.
  • Properly operate kitchen equipment and immediately report damaged, malfunctioning, or unsafe equipment.
  • Follow all safety procedures when working with knives, hot surfaces, ovens, cooking equipment, chemicals, and other kitchen equipment.
  • Communicate effectively with Bistro, Front Desk, and hotel associates to ensure timely service and a positive guest experience.
  • Maintain awareness of hotel occupancy, groups, events, and other business levels that may impact Bistro operations.
  • Assist other Bistro associates during periods of high business volume and demonstrate flexibility in supporting both front-of-house and back-of-house responsibilities.
  • Maintain a professional appearance and demeanor in accordance with Avion Hospitality and brand standards.
  • Attend required meetings and training sessions.
